Gingernut Biscuits

Crisp at the edges, a little chewy in the middle, and packed with the warmth of ginger, these nostalgic biscuits are perfect for dunking in a glass of milk or a hot cup of tea. Simple, comforting, and just the right amount of spice.

Ingredients

  • 130g self-raising flour
  • 50g salted butter
  • 40g soft light brown sugar
  • 50g golden syrup
  • ½ teaspoon bicarbonate of soda
  • 1 teaspoon ground ginger
  • 1 egg yolk (pasteurised)

Method

  1. Preheat the oven to 160°C (fan). Line a baking sheet with parchment.
  2. In a small saucepan over low heat, melt together the butter, sugar, and golden syrup. Remove from the heat and allow to cool slightly.
  3. In a mixing bowl, combine the flour, ground ginger, and bicarbonate of soda.
  4. Pour in the cooled butter mixture and add the egg yolk. Mix until a dough forms, then knead briefly until smooth.
  5. Roll the dough into 20g balls and place on the prepared baking sheet, leaving space between each.
  6. Bake in the centre of the oven for 10–12 minutes, or until golden brown.
  7. Allow to cool before serving – or enjoy slightly warm for extra comfort.
