Gingernut Biscuits
Crisp at the edges, a little chewy in the middle, and packed with the warmth of ginger, these nostalgic biscuits are perfect for dunking in a glass of milk or a hot cup of tea. Simple, comforting, and just the right amount of spice.
Ingredients
- 130g self-raising flour
- 50g salted butter
- 40g soft light brown sugar
- 50g golden syrup
- ½ teaspoon bicarbonate of soda
- 1 teaspoon ground ginger
- 1 egg yolk (pasteurised)
Method
- Preheat the oven to 160°C (fan). Line a baking sheet with parchment.
- In a small saucepan over low heat, melt together the butter, sugar, and golden syrup. Remove from the heat and allow to cool slightly.
- In a mixing bowl, combine the flour, ground ginger, and bicarbonate of soda.
- Pour in the cooled butter mixture and add the egg yolk. Mix until a dough forms, then knead briefly until smooth.
- Roll the dough into 20g balls and place on the prepared baking sheet, leaving space between each.
- Bake in the centre of the oven for 10–12 minutes, or until golden brown.
- Allow to cool before serving – or enjoy slightly warm for extra comfort.
