Oatmeal Cookie

Wholesome, golden, and quietly moreish - the classic Oatmeal Cookie blends toasted oats with buttery warmth and a gentle sweetness. Comforting and timeless, it’s a simple pleasure made for slow bites, cosy moments, and a well-earned pause.

Ingredients - Serves 12

  • 130 g Plain Flour
  • 150 g Rolled Oat Flakes
  • 3 g Salt
  • 2 teaspoons of vanilla extract
  • 1 g Ground Cinnamon
  • 140 g Unsalted Butter
  • 140 g Light Brown Soft Sugar
  • 50 g Golden Caster Sugar
  • 2 each Free-Range Large Eggs
  • 30 g Dried Mixed Fruit
  • 50 g Dried Raisins
  • 50 g 72% Dark Chocolate

Method

Pre-heat oven for 160 degrees.

Mix all ingredients then roll into balls (1 tablespoon= 1 dough).

Gently press the top of balls down.

Bake for 8-9 minutes.

They should be light golden brown on the edges but almost wet in the middle.
