Oatmeal Cookie

Ingredients - Serves 12

130 g Plain Flour

150 g Rolled Oat Flakes

3 g Salt
- 2 teaspoons of vanilla extract

1 g Ground Cinnamon

140 g Unsalted Butter

140 g Light Brown Soft Sugar

50 g Golden Caster Sugar

2 each Free-Range Large Eggs

30 g Dried Mixed Fruit

50 g Dried Raisins

50 g 72% Dark Chocolate
Method
Pre-heat oven for 160 degrees.
Mix all ingredients then roll into balls (1 tablespoon= 1 dough).
Gently press the top of balls down.
Bake for 8-9 minutes.
They should be light golden brown on the edges but almost wet in the middle.
